Try making Houtou, Japanese traditional noddle

My guests from the United States really enjoyed making HOUTOU, a local traditional noddle of Yamanashi. The restaurant named Houtou Lab near Lake Kawaguchi offers a hands-on trial to make Houtou noodles. An instructor taught us how to do it with illustrated slides, which helped me explain the procedure in English.

Houtou is a type of traditional Japanese noddle, Udon, mainly made of wheat, salt, and water, but it has a much wider shape. Generally, Houtou comes in miso-based soup with pumpkin and other veggies.
